If someone were to make a character starting at 5th level, would they be able to immediately replace one of the known 3rd level spells? My initial thought is no because they aren't able to replace any at 1st level, and because the spells aren't actually "learned" until the level up is complete. Yes, that's how all such abilities work in the game - the PC can choose the order of operations for abilities like this, so they can choose the order to be 1) learn Dispel Magic, Protection from Energy 2) Swap out one of the 2. For example, they absolutely can replace a spell at first level - that's still a gained sorcerer level.
