Sorcery Incarnate says "while your Innate Sorcery feature is active, you can use up to two of your Metamagic options on each spell you cast." Does this supercede the rule that "You can use only one Metamagic option on a spell when you cast it unless otherwise noted in one of those options"? For example, could a 7th lvl Sorcerer while using Innate Sorcery cast a Subtle Careful fireball? A Distant Heightened counterspell?
Always good to remember the principle that "specific beats general". The rule prohibiting the use of multiple metamagic options on a single casting is a more general rule; the Sorcery Incarnate feature is a more specific rule that overrides it.

That is correct and is largely the entire point of it (though being able to go mage-rage for 2 SP is quite nice, in and of itself).
