I'd like to start getting a bit more detailed with the religious lore in the games I both run and play characters in, but outside of the Sword Coast Guide and the PHB there isn't a lot of information about the majority of the pantheons. Do most of these gods have stories in the vast majority of fiction, or is it more left up to player and DM imagination? Currently I just check one of the FR wiki pages, and look through the list of citations, but they only really tend to reference a page or two from old player handbooks.
My gnome cleric in particular is a follower of Baervan Wildwanderer, though I don't know much about him (and have to make up a lot of half baked anecdotes on the spot).
So I tend to use the FR wiki pages too - there is a ton in there. When you combine it with some of the referenced sources in old Dragon Magazines and sourcebooks for deeper dives, I think you get quite a lot.
Alternatives are of course to jump to youtube - there are some amazing lore keepers out there that has put together a ton of knowledge on deities, creation stories and the like (My main go to channels are MrRhexx, AJ Pickett, and Jophordan )
There is of course a ton of books - Between Ed Greenwood and RA Salvatore, you can be reading for a very long time :-)
The Sword Coast Adventurer’s Guide has lots of information on the pantheon of human gods in the Forgotten Realms, and Mordenkainen’s Tome of Foes has information on the pantheons of other races. I highly recommend both of them (if you can afford to buy them!).

I live with several severe autoimmune conditions. If I don’t get back to you right away, it’s probably because I’m not feeling well.

Mordekainen's Tome of Foes has some info about the Elven Gods. The good and the bad.
