the same way anyone else acquires it: they were a Wild Talent, and the stresses during their adventure awoke their latent psionic abilities. :D

Sorry, couldn't resist. I like your idea and I think it wouldn't be hard to make it work. Anything from a latent psychic awakening like Devan said to maybe your bond with your kalashtar partner broadening your mind (literally). You have a lot of freedom here.
If you're having a tough time thinking of something, think of how superheroes get powers and come up with a mini origin story as well.
