The only games that are given a name beyond dice or cards are Dragonchess and Three-Dragon Ante, that I am aware of that is.
I don't know what specific rules those games may have, or if they've ever even been defined, but in 5e terms, as long as you're proficient in that game you can add your proficiency to ability checks to play that game.
EDIT: Never mind, apparently Three-Dragon Ante is an actual game that you can purchase through Wizards of the Coast, though I haven't looked to see if it's still available.
