1- Are the ones listed in the warlock class and Mordinkinen's tome of foes are the only ones?
2- Some of the old ones like Zargon (correct me if i am wrong) are originally devils or demons.. An old one can be almost anything as long as it's extremely ancient and cause madness like the HP lovecraft mythos?
3- Kinda part of 2, Can a dragon or a vampire be a great old one patron?
4- is there a great old one in the Dnd Lore that isn't about devouring everything or hell bent on destroying the entire existence? I know their morality is different that of ours and it's hard for us to comprehend. But i am hoping for something different, kinda mysterious and not necessarily needing your sanity or your soul.

I think the idea behind "Great Old Ones" is that they can be anything, and the don't necessarily have to cause madness either. It's more that they are inscrutable, so no mortal can really understand what they're about or what their end goals are. That being said, while I thin most of the DnD lore specific ones are about devouring and conquering, I've seen some great homebrew Old Ones that took a different direction. (For example, I read one that only wanted his name to be associated with a general pleasant feeling, and so only good aligned warlocks could have his patronage. No particular reason, he just wanted people to have a positive image of him).
If you wanted to go for a dragon or a vampire, I would suggest looking at 'The Undying' patron option in Sword Coast Adventurer's Guide. It's a patron option that focuses on powerful immortal beings like liches, demigods, and potentially vampires and dragons.
