So I'm currently playing a Great old one warlock human named Levia, her patron is Dagon and she often runs errands in the abyss. I like running warlocks with some sort of curse which goes along with making a pact so I chose that she would be made almost entirely out of tentacles leaving only her face remaining
Maybe, and hear me out, but talk to your DM to get them to have you fixed during the campaign? You start off normal but during your journey in the campaign you get cursed and the curse slowly eats away your body. I think it could be a good plot point.
I'll definately ask my DM x_gamers_rise_up_x and to Mother_Coconuts by making a bargain with a great old one you practically let it feed on your mind body and soul slowly corrupting you into something unrecognisable, at least thats what i think it should be (there isn't much official lore about how a patron changes your appearance)
Personally I like the This Is Your Life section in Xanathar's Guide to really flush out a background. I actually created a word document with what I think is important information needed for the character's background and personality. I like the idea of a curse as part of the pact, but I wouldn't neccessarily say every patron would curse the character. In Xanathar's Guide they give some suggestions as to a mark that the patron puts on them to signify the pact. Not all warlock patrons are evil. Xanathar's Guide is a great tool for making backgrounds and flushing out aspects of your characters. I hope that I helped since the title of the post was "Need help making a backstory" and I focused on the background which is what you need for a backstory.

Just curious how much of a Lovecraft fan you are? Considering the Great Old One version of Dagon was developed by him, a thing that he used was that the monsters had a certain amount of hereditary horror to them.
Maybe you can use that with your character, ancestors somehow connected to Dagon and she might be the price offered to It. Or Dagon just kept an eye on her family line and there was something about her that It wanted.
How about: every time your warlock disobeys an order from her patron, the tentacles cover more parts of her body, and it gradually becomes more and more painful.
