Introduce phase spiders into your campaign and your adventuring party will being to suffer arachnophobia. Every time they see a large spider web they go to ridiculous lengths to try to bait the phase spider that may or may not be there. Been one of my favorites for a long time.
My party accidently summoned a chasme, and we turned it into our pet. his name is Albert. He helped us kill tiamat!

According to all known laws of aviation, there is no way a bee should be able to fly. Its wings are too small to get its fat little body off the ground. The bee, of course, flies anyway because bees don't care what humans think is impossible.
Off the top of my head, Gelatinous Cubes. I love any of the really classic monsters: Kobolds and Carrion Crawlers in particular have a special place in my heart. As a DM, though, my favorites are Skeletons and Zombies (the latter are the best for introducing new players to combat, since they have low AC and poor attacks but high HP for a good long nonlethal battle...and new players don't know to take advantage of their speed).
Anyway...you hear that, Wizards? 5e Carrion Crawlers need more love!
