Traditionally most societies view desecrating corpses as foul and evil. Death gods tend to fall in line. I have an idea for a paladin or cleric that follows a death god, but the character itself eats carrion. While these are most often evil and unlawful things, the character would be lawful good, albeit not commonly viewed as much.
I'm looking for a god or goddess that doesn't put stock in the material, and is solely concerned with the soul or spirit. I'll give some quick examples or ideas:
Material possessions aren't sacred, so grave robbing isn't a crime.
Bodies are physical vessels, so tampering, eating, or destroying them isn't desecration.
The spirit is vital thus most undead are abominations and any act that binds a soul to a body unnaturally is frowned upon.
Tampering with the souls of the dead is frowned upon.
The only exception I can possibly think of is prolonging the life of someone dying if their death might result in a vengeful spirit, not allowing the person to truly pass and rest.
If anyone knows of a god or goddess that fits the bill and where I might be able to read up on such a deity, I'd be most appreciated.
Osiris is often considered to have a domain in both Life and Nature. It is also a deity of the "underworld" where all souls pass for judgment. In some interpretations, it is considered Lawful Good. It would definitely want souls untouched. Yet, the religions surrounding Osiris believe in physical possessions passing into the realms of souls.
...or you could create a deity variant of your own. Maybe, the deity is depicted as an old, bent person carrying a cart of the dead - most often seen on abandoned battlefields where bodies still lie. The deity's sacred animal could be a common fly.
If a deity can have a Life domain and be a deity of a place of souls, what you're seeking is possible, but it might requires some tweaking to meet all your criteria.
EDIT: A Death domain deity that shepherd souls is a good option, too. Still, lots of Death domain deities that covet souls as power or tools and lots of Death domain deities that see the post-living corporeal remains as remarkable vessels for manipulating the Material Plane.

In the Forgotten Realms, Kelemvor is a non-evil death deity. His tenets include not-expanding your lifespan through unnatural means, and is very biased against undead. Clerics do handle burial traditions, so how that aligns with your view isn't quite perfect.
