Cyclops - Multiclass Hexblade Warlock/Champion Fighter using eldritch blast as the eye beams but focusing more on Champion than Hexblade; take unarmed fighting style and maybe some of the vision related invocations?
Beast - Moon Druid with polymorph and/or Beast Barbarian
Wolverine - Multiclass Moon Druid/Champion Fighter/Bear Totem or Berserker Barbarian
Rogue - The least obvious... some caster with access to vampiric touch... multiclassed with arcane trickster rogue?
Gambit - Genie Warlock?
Storm - Storm Sorcerer who takes all the weather control/lighting spells
Jean Grey - GOOlock who takes read thoughts and telekinesis
Jubilee - Swords Bard who takes color spray and all the prismatic spells
Rogue should actually be a martial class: fighter, barbarian, or paladin, depending on your preference. In 92 she still had flight and super strength as her main abilities even though they weren't mutant powers (she'd absorbed them from Ms Marvel). Gambit was the actual rogue on the team.

What race/subclass combos would to use to make 5e analogs for the X-Men animated series roster?
To anyone under 40, that would be: Cyclops, Beast, Wolverine, Rogue, Gambit, Storm, Jean Grey, Jubilee and Professor X.
Are their abilities even in 5e?

Storm is a tempest cleric - call lightning, and flight outside at high levels.
Wolverine’s got to be some kind of barbarian.
