So my group has just started a new campaign, and I am playing a Firbolg Ranger.
We were all given a free feat at the start of the game, in which I took the Gunner feat. My stats are:
Str: 8 Dex: 18 Con: 12 Int: 13 Wis: 15 Cha: 10
I currently have leather armor and a pistol for my main weapon. As it stands, I seem to be slotting into lookout/ heavy Artillery with the group. I'm trying to plan out my build. I'm really interested in the Hunter Subclass, but am open to others (except Drakewarden and Gloomstalker, as I have no interest in either). With the Hunter Subclass and Ranger in general, I don't really see any reason to stay in the class past level 7, so I'm also looking into some possible multiclassing for some utility options with heisting in mind. The first that comes to mind is Monk, followed by Cleric or Druid for the last 4 levels. Would love suggestions on help for any build suggestions with an eye towards Monk or Cleric Multiclassing. Thanks in advance!
Any reason in particular you're interested in the Hunter? I personally am rather fond of the Monster Slayer. The Fey Wanderer would be another potentially good choice.

"Canon" is what's factual to D&D lore. "Cannon" is what you're going to be shot with if you keep getting the word wrong.
If you're interested in thievery and the like, then honestly Gloomstalker seems it would be the best suited to that, and is actually pretty good. But if you don't want to go in that direction, despite it lining up very well with what you're saying you want, then Fey Wanderer would be good too. You get Charisma bonuses that could help with heisting, and some good utility options from the spells it gives.
As for multiclassing, again if you're talking about thievery/heisting, then Rogue seems the obvious choice. I'm not sure how Cleric would really help you achieve what you're looking for, and Monk might work, but honestly a lot of what it would give you is redundant or not useful. You don't need the unarmed strikes, and only 4 levels means they'd be useless compared to your weapons. Maybe your AC would be a little better, if you haven't gotten an better armour by that point, but it seems unlikely. Rogue would give much better options at that point.
I feel like if you're looking for a Monk subclass that contributes to thievery, Shadow Monk is the obvious choice. However, Monks are kind of infamously not ideal for multiclassing... you want as many Ki points as possible, and you only ever have as many ki as you do monk levels. I think Monk also doesn't pair particularly well with a ranged-focused character wielding a gun, since it doesn't qualify as a Monk weapon and most Monk abilities assume melee combat. You could potentially get some use combining this with the Kensei Monk... I believe that a pistol surprisingly qualifies for a Monk's Kensei weapon (it's a martial weapon that lacks the Heavy and Special properties), so that's the only Monk class that I think you could get any serious benefits from even without getting a lot of Ki points.
As for Clerics... my mind immediately goes to the Trickery Domain. The Domain spells help with producing distractions and improving stealth, which can help if you're interested in more thievery and such. The Invoke Duplicity feature can be a little hard to take advantage of in combat, since it's a full action to trigger, but it also has a lot of uses outside of combat as well.

I’m not a huge fan of planning a character’s development before the game - the events of the campaign really should dictate the development as they do in life. That said assuming you are going to ranger 7 then you should go to R8 if only to pick up the ASI as you will miss it if you don’t. As transmorpher said monks rely on Ki so they aren’t really a good option for multiclassing. Cleric or Druid would work - wildshaping into things like birds/cats/rats would certainly provide a stealth option. The thing about rangers tho is that starting around L8 they transition from martial first caster a distant second to control caster first martial a close second. Leaning into that casting aspect is what you’re doing anyway with a cleric/druid MC so looking at what spells you get at L8+as a ranger is something to look at before moving into MCing. If your not looking at spell use then why not simply NC as a rogue? Maybe go scout rogue acknowledging the ranger background and improving the ranger’s stealth, nature and survival skills in the process.

Hunter is a great subclass, don't let the nay sayers above discourage you. Colossus slayer is great, Horde breaker is decent, and Steel Will and Evasion are excellent as well. But if you want to MC then I'd recommend:
Tempest Cleric for some synergy with Lightning Arrow, Knowledge Cleric to build on the skill-monkey aspect. Starry Druid for the sweet BA attack. Wildfire Druid for the really cool pet.

Taking a Criminal background for thieves tool proficiency could help too.
