If the Aarocokra can drop the enemy they fall Prone and you would get ADV on the attacks.
"A fall from a great height is one of the most common hazards facing an adventurer.
At the end of a fall, a creature takes 1d6 bludgeoning damage for every 10 feet it fell, to a maximum of 20d6. The creature lands prone, unless it avoids taking damage from the fall."
So unless the enemy has a way to negate the fall damage they will be prone near you and you can just run up and stab them.
Otherwise you could talk with your DM about the Disarm variant option in the DMG:
Disarm
A creature can use a weapon attack to knock a weapon or another item from a target’s grasp. The attacker makes an attack roll contested by the target’s Strength (Athletics) check or Dexterity (Acrobatics) check. If the attacker wins the contest, the attack causes no damage or other ill effect, but the defender drops the item.
The attacker has disadvantage on its attack roll if the target is holding the item with two or more hands. The target has advantage on its ability check if it is larger than the attacking creature, or disadvantage if it is smaller.
This would help you protect the fly boi from ranged attackers by disarming them of their bow.
You can hold an action to attack when he swoops in to attack so that you can get your sneak attack off.
"I ready an action to attack when Fly Boi flies in and attacks the creature" Since you have an ally within 5 ft then you can proc sneak attack.
Not sure what your oath is but if you have any oath spells that Restrain or Prone a creature use that to drop flying creatures harassing him.

Does anyone use player combos (rather than just randomly attacking on your turn?)
For RP reasons my Dexadin rogue Gnome has gotten chummy with our Aarocokran monk and looking for some cool combos.
So far we've stunning strike followed by a Smite/Sneak attack
And the Aarocokra 'dropping' the Gnome on an enemy for a grapple followed by a sneak/smite
Are there any other cool combos we're missing?
