Generally speaking, Gods are immune to things like fatigue. You might be able to kill their avatar on the material plane, but that doesn't kill the God itself.
Note: Orcus has Condition Immunity: Exhaustion, but Tiamat does not. If Tiamat "dies", she returns to the Nine Hells temporarily.
Putting aside the question of how you would cause a god, even their CR 30 avatars, to reach that level of exhaustion... every god will likely have access to Greater Restoration.
This is one of those cases where you really should be asking your DM. "Do godly avatars and other spirits follow the same rules as mortals?" MM Stat blocks aren't exhaustive of all of a creature's abilities. There's nothing in stat blocks to suggest that they are immune, but stat blocks are designed with specific scenarios in mind; in the case of Tiamat, she shows up for an epic fight. Win or Lose, the exhaustion won't be relevant to the story, so its not included. Undead are known for tirelessly chasing people, so its relevant for their stories.
I’d go with, ask your DM. There’s precious little rules around gods in this edition, if your DM wants there to be a way to kill one, there is. If not, there isn’t.
I guess the answert to "how would you even give them exaustion?" is "Sickening Radiance" and some kind of immobilisation(Wall of Force etc.). As to if that should work I'd say "NOOOO!" as a DM , the provided Statblocks might not have "Immunity against Exaustion" in them, but killing a god that way would be SO anticlimactic. Maybe I'd allow the exaustion to weaken the avatar, but no "killed by exaustion".
