To what degree can you control the summoned spirits with the Sorcerer Metamagic? For example, if you summon a creature that can cause a target to make a saving throw, can you Heightened Spell it and impose disadvantage on the save? Can you use Empowered Spell to boost the damage it deals? Can you use Distant Spell to extend the range of its spell attacks?
Ok. I thought since you summon the spirit with a spell, your Metamagic could effect the spirit. It's also a cool cinematic moment, using your magic to bolster the spirit.

No. These spells interact with metamagic in the same way that every other already extant summoning spell interacts with metamagic.
But the sorcerer didn't have any summoning spells before this UA.
I thought Metamagic only effected Sorcerer spells, but I just reread it and I see that it isn't the case. My bad.
What about the Shadow Magic Sorcerer's Hound of Ill Omen? Would it impose disadvantage on saves from the spirit's abilities?
Maybe I'm missing something in the text, but nothing about Hound of Ill Omen seems to impose disadvantage on anything?
[EDIT] Nevermind, found it. No. The spirit's abilities are not spells you cast.
