Could a Planetar or non evil deities/Demi-god/ other worldly power be an acceptable Undead Warlock Patron? I know 5E definitely gives freedom in many ways, but was wondering if this was one of them. I tried to look up some alternative patrons for this subclass and didn’t find much outside of the suggested ones like Stradh, Acererak, Ankhtepot etc. I ask because I have a Vengeance Pally who is going to multi class but stay good (although he is going from neutral to chaotic good).
Talk to your DM. You can reflavour a pact any way you like story-wise.
If you want the UNDEAD WARLOCK PATRON and still want to be good, no problem, good people can have evil patrons. However there are plenty examples of Non-evil aligned undead. Baelnorn's in the Forgotten Realms for example. Kelemvor in the FR is the god of death and the dead. He is mostly against undead but he or his agents might grant powers to allow you to confront/destroy undead. Ghosts, Vampires and Revenants don't have to be evil. Death Knights (like Olanthius) story-wise could be seeking redemption from their curse and could grant powers to warlocks to help with that.

I had a Dragonborn Fighter 1/ Warlock X in a campaign that accepted a deal on the brink of death but stayed on a good path. His view was that he controlled the power and could do good or evil deeds with it.
I came up with an archaeologist who unearthed a disturbed mummy who stopped him from suffering a curse on the tomb. in return the mummy asked him to retrieive his stolen canopic jars so he could rest in peace giving him a warlock pact to do so.
