So my character is a reborn undead warlock and a shadow magic sorcerer. And I was thinking for my character's undead warlock patron to be multiple spirits that attached themselves to her after she died and came back and gave her power. In exchange, my character let the spirit cling to them so they could experience life again. So is it okay to have multiple spirits be my character's patrons?
But you must talk about this with your DM, to see if in his world it is valid or he has another idea you can built together. Patrons are mostly fluff and could play 0 role in a campaign, but for some warlocks in certain campaings Patrons present a huge amount of RP opportunities, from the way your characater behaves or intereacts wiht NPCs and other PCs, to an endgame related to the campaing (How does your particular Patron reltates to the end goal of the campaing and how could it affect you) or an important sidequest for your Character (what reason did your character had to accept the Pact? What happens when it is fullfilled? what goals does your character has or the Patron have with you?)...
Just present your idea to the DM, and see how it affects the story you and your party are telling/playing.
If you need a lore based example of such a patron you could draw on "One of Many" from the Neverwinter Nights 2 video game, essentially its a gesalt entity composed of the spirits of people that were killed/cremated, in the game one aspect is a barbarian, another is a warlock and another is a rogue and, depending on what you did in thegame, it could become an ally and try and kill you. It's one of my favourite D&D villans.

Short answer: Sure, sounds interesting.
