I want to say that they were actual animals in older versions of the game, but they are Spirits (Fey, Fiend, Celestial) that take the form of whatever. Does a spirit taking the form of a creature have venom or does it produce the effect of poisoning someone magically?
I wouldn’t take advantage of an undending supply of familiars to harvest poison, the DM might decide that someone from the corresponding plane might take offense lol.

I am a huge fan of the warlock, specifically pact of the chain, but I see the new rules as potentially making it a bit too versatile?
That's not how harvesting poison works.
It's at will, and faster than normal, but it's not for free. There is still a 10 gp consumed material component.
