If I have used Gaze of Two Minds on my imp familiar and my familiar turns invisible and goes stealth, if I cast a spell through him, will it break his stealth? Will he turn visible? He's not the one casting the spell. If nobody notices the verbal/somatic components of me casting the spell 60 ft away, can I cast spells invisibly?
Well, this fully depends on how the stealth for this ruling would be. I would think though that you might have to reroll the stealth to try and hide the Imp again after the fact
That's correct. The Imp is not casting a spell, so it does not lose its invisibility.
However, depending on the nature of the spell and how alert the target is, a DM might reasonably rule that doing something like this does allow the target to determine where the familiar is. For example, if you use this method to cast something with a visible projectile like Fire Bolt or Magic Missile, it's reasonable to imagine the target could identify where the projectile(s) came from, and launch a retaliatory attack (though it would be at disadvantage due to the Imp still being invisible).

As a player of stealth games, you can use the visibility of the spells to your advantage to draw targets to areas, or leave them wondering. A readied move from the familiar when the spell gets cast from them can reduce the odds of it being hit while directing enemies to where it was. Which then can be used by your party to its advantage. And this does not have to be a combat spell like eldritch blast. But think minor image where you can use the familiars line of sight to target where the sound or image comes from. Which is why I think this really plays into the hands of the GOO with their silent casting of enchantment/illusion spells.
