To craft a magic item, you and any assistants must have proficiency in the Arcana skill. Additionally, you must use the required tool to make an item and have proficiency with that tool. Any assistants must also have proficiency with it. Characters can combine their efforts to shorten the crafting time. Divide the time needed to create an item by the number of characters working on it. Normally, only one other character can assist you, but the DM might allow more assistants.
Sphinx of Wonder vitally has arcana proficiency baked into it's stat block, which makes sense because the flavour of the creature is that it helps with research and creation. Pact of the Chain from one level in Warlock or the Eldritch Adept feat gives the player access to a Sphinx of Wonder.
However, in order of the Sphinx to assist in helping to create magic items, they much have a tool proficiency... enter the Manifold Tool a Common magic item that gives can be any tool and also gives that proficiency... enjoy!
i mean I guess, but I think that have to be able to use said tools. And the lack of opposable thumbs may get in the way here. If your DM is cool with it though, have at it.

The crafting rules go into zero detail on what it means to assist (apart from having necessary proficiencies), but I believe that the Help action is intended to give more context on what assisting means.
I believe that when ‘helping’ to scribe you do not need to physically write the scroll but rather have the necessary expertise to meaningfully assist. This could be dictating, handing reference/craft materials or correcting mistakes. It would be quite difficult for two creatures to write on one scroll at the same time, but that is thankfully not what the rules imply.
I believe the Sphinx of Wonder is perfectly suited to this style of assistance: “A sphinx of wonder is brightly feathered and the size of a lion cub. One comes into being every time a unique idea is conceived on the Material Plane. Each sphinx of wonder is fascinated by a particular type of story or field of study, and it learns all it can about that topic. It bears a unique sigil on its forehead that suggests the type of knowledge that fascinates it. Sometimes, a sphinx of wonder forms a bond with a mortal scholar and aids them in their research.”
As such I think this interaction (if perhaps not specifically predicted) works RAW (just need proficiency) and RAI (to meaningfully assist with the crafting process).
