Glimpses at other settings, with a race / feat / class included..
Give us the rules for Scro, for example, so we can use them in a campaign. Their `jammer crashed, or something, and they're holed up in the forest while working on gathering the supplies to make repairs, while rumors spread about the mysterious newcomers.
Or now that we have psionics, give us the rules for the Elan.
Or a peek at the Dark Sun universe, with Thri-keen.
Or a school of wizardry that specializes in all things planar, located in Sigil.
Or perhaps a revisiting of Eberron, and improved Dragonmark rules, since the Artificer's been spun off to it's own release.
The Undying Patron could use some love, too. Maybe a "This is what Larloch's up to, after his Candlekeep plan was foiled" and some additional devotions for him and Patrons like him.
Or go for broke. Kender!
Things like that. Just a glimpse at a setting, some fluff and mechanics to go with it. The playerbase will thank you.

I would love to see some "new" classes get balanced into UA. I know there are thousands of strangely balance homebrew ideas out there. inspiration isn't far away.
also, as I've said in the Modern Magic forum, more Modern Magic stuff would be beautiful.
I would love crafting rules, or really extended downtime rules in general. I also wouldn't mind some more prestige classes.
Sweet Kord on a cracker, crafting rules would be incredible. What's currently available leaves a lot to be desired, which is something I think was true in previous editions as well. I would also love an extended list of downtime options.
I know it's controversial, but some kind of real pricing guide for valuing items would be appreciated. The Sane Magic Item Prices list is a great start, but we need more. To get in front of the "5e is a low magic setting" comments, I'll say that having a guide for pricing doesn't mean you have to make items available for purchase by players, it just gives a good sense of the value of what you're handing out to players. It also gives the option to easily include magic item shops if that's the setting you're running or help with creating crafting rules.
Also, a nice new chunk of mundane items ported over from previous editions. 3.5 had a truckload of miscellaneous mundane items spread across the various books that were both functional and flavorful.
My favorite legacy manual was Dungeonscape for v3.5. Specifically the dynamic encounters section. The monster roles and definitions and encounter archetypes were something I will never not use. I would like to see monster variants that build upon these roles (hoser, burner, blocker, etc...) so I don't have to state that the goblin village has amenable relations with an orc tribe to put good brutes in the encounters. I usually do this stuff on my own, but I'd also like to see some art behind it as well

I enjoy the content that comes out from Unearthed Arcana, but I sometimes wish that it offered other things.

Personally I would love to see the Healer class from the Miniatures handbook, I've always though it was a nice concept for a class.
Also some more races would be nice.

Other settings would be good, I want to do an interplanar travelling thing sometime.
Backgrounds are solid.
Races are always fun.
I would definitely like to see new domains and paths, especially a Cleric death priest or a Druid Circle of the Sea.
My campaign members have taken advantage of some that some are out there, and I have also created my own. Woild love to see more.

I would like to see the eldritch knight get a look-over
A sorcerer revised on the scale of the ranger revised. Many people are just as unhappy with the sorcerer as with the Ranger.
A revisit to Artificer. The pet doesn't scale and for some reason the ability score bonus is not at 19th level like everyone else.
Edit: I also would like to see some more higher level spells. I realized after seeing their arcana on low level spells.
Since we're so deep into Storm Kings Thunder season, a revisit to the Rune Magic Prestige Class.

Both proposed edits to the class as rebalances, since both have said they aren't sure why anybody would play a sorcerer over a wizard.

Perhaps not the very next UA but down the road they could possibly cover 5e updates to various NPCs of renown.
