Guarding their travels, protecting them from harm, and ensuring their survival. Long pilgrimages meant lengthy times spent on the road, hunting and gathering resources for survival. And, in the few instances where survival was not guaranteed, the solemn act of committing a faithful to an earthen rest. The travels were rough, but your faith or your coin pouch drove you forward. This help comes in the form of shelter and meals, and healing when appropriate, as well as occasionally risky assistance, such as a band of local citizens rallying to aid a sorely pressed knight in a fight, or those who support the religious order helping to smuggle a Holy Protector out of town when he or she is being hunted unjustly.
