In the Middle Ages, there were no veterinarians as we know them today. Rather, they had marshals and fariers whose primary concern was the care and shodding of horses.
The marshal is an interesting character though - mixing the schools of Christianity, alchemy, and animal husbandry wth perhaps a little leeching thrown in for good measure. There was knowledge of religion, magic, and science combining for less than optimal results to be sure, but they had to know so much whether it was true or not.

A marshal can certainly use their abilities on humans as well as they can on animals. The marshal had to be a savant when it came to improvisation with what could pass for tools around them - trying to figure out a treatment for whatever ailment presented itself to them.
Marshals have twice proficiency with an Herbalism Kit.
