I (new DM) have hosted a little adventure with a few friends. They are all "new" Players and in the adventure they killed an Owlbear. After the fight was over, someone wanted to loot the meat from the Owlbear, I said of course and he got the meat. Then one player asked: ,,What kind of meat is the Owlbears meat? Is it venison meat or chicken/turkey meat?". So now im sitting here and I ask me the same question.
I would go with maybe a bear meat in the long run. But as a DM you can make that call! You want to ti be gamey like bear meat but tastes like chicken YOU CAN!!!!!
I'd call it game meat. 'venison' is anything from an ungulate. 'red meat' is typically from domesticated livestock. seafood is fish and crustaceons. poultry meat is most things that fly. most everything else i'd call game meat...or maybe bush meat.
So bear meat is a thing. Owls aren't really a game bird. I'd say it probably tastes like bear, with the flavor softened a bit yet a little more succulent -- presuming the owlbear would taste more like a wild bird rather than farm raised poultry.
There's actually a good article in the most recent or second most recent MCDM Arcadia that's basically all about "Can I eat that?" and does a deep dive through the SRD as far as what's edible and what's not worth hunting if the party is in surival mode.

I would make it a highly sought after treat among hunters that know something about it. Serve some red wine with cheese and crackers while it cooks. Drown it in Worcestershire sauce in a pan with onions, shrooms and carrots. Serve it chopped finely in rice with egg and water chestnuts. Sautee some green beans in butter and garlic. Make sure to have a firkin of dark ale for all your friends; they'll be coming from miles around. Add flakey croissants and pastry with butter and honey for dessert.

As it's a bear with the head of an owl, all the good meat would likely taste like bear. You could try eating the owl head, but that's probably not worth it.
Reversing the thread, when owl bears eat do they do the owl pellet thing, where they basically have a catch in their throat for their prey's bones and what not, which they then regurgitate much like a cat spits up a hairball?

It depends on whether the action that creates the pellets occurs in the stomach or the gizzard. I'm too lazy to look it up, but being unable to chew with a beak, an owlbear would possess a gizzard. If pellets are created within an owl's stomach, then I would say that they probably do not make pellets.
Bird pellets contain non-digestible bits of things they eat. Since owlbears mostly hunt large prey, they probably either don't produce pellets because they can eat around the bones, or their pellets would only contain things like hair and clothing.

If you want darker meat, I'd go for the midsection. The areas around the neck and shoulders are lighter meat, but still dark. The darkest cuts are from the area around the back and hindquarters.
