You have discovered how to control Chaos Bolt. Unlike others, when you cast the spell Chaos Bolt, you can choose the attack's damage type. When you cast the spell, choose one of the eight types listed within the Damage Type table to be the damage type for this casting of the spell.
This ability does not negate the potential for energy to leap from the target to a different creature. That effect is still determined by rolling the same number on both d8s.
