You can attack at no penalty from the saddle at full gallop with a bow or fire arm, all attacks of opportunity against you are at disadvantage if your mount is moving faster than a walk.
You may use your mount as a moving shield, sliding your body over the side you can fire your gun over your saddle, add +4 to AC while doing this but you cannot reload unless your weapon has an auto reload or magical reload feature and you must make a concentration check DC 12 once every 120 feet or be thrown from your saddle.
