On the rules for the Steel Defender, it says "If the mending spell is cast on it, it regains 2d6 hit points.".
It doesn't make sense that 2d6 limitation since Mending is a cantrip which can be used several times and that limitation neither affect combat since Mending won't be used due the 1 minute casting time.
Is there any limitation I have missed? Otherwise you can just use mending multiple times until you arrive to full health, but in that case it would make more sense to just put that it would restore full health.
It probably won't come up often, but occasionally you don't have all the free time in the world to maximize your healing. It's for those situations where a group of enemies are attacking and you only have a minute or two to heal your Steel Defender before the next wave arrives.

Or you can only spare a minute or two before giving chase otherwise the villains will get away and be able to prepare for your coming.
Considering an Artificer can simply repair their Steel defender with Smith's tools, the limit mending has it's is use in combat. You can't repair your defender using tools during rounds of combat, so having a cantrip to do so is where the value of mending comes from, as a mid-battle heal for your lil buddy. Otherwise he should always be at full health since your able to repair him yourself.

There are also a few magic items that allow you to cast mending as an action instead of the full minute casting time: Needle of Mending, Lyre of Building, and Akmon, Hammer of Purphoros.
