I have an idea for a character that seeks glory in the form of combat against powerful foes, but I’m not sure if I should make this character a barbarian or a paladin. If this character idea would work better as a barbarian, what race and subclass would you recommend? Also, if it’s any help, my original ideas for race were either half-orc or dragonborn.
Not real sure what you're asking for here. There are many examples of warriors who seek out glory by combating powerful creatures, are you just looking for ideas of what type of barbarian would suit this play style the most as well as RP options?
For example, my barbarian is a Goliath and he always seeks out the lands most powerful monsters/creatures to test himself against to bring honor to his herd.
That’s pretty much what I’m asking, mainly about if this kind of character would be best suited for a barbarian and what subclass would work best for this kind of character.
Personally I think Totem Warrior is amazing because it's so versatile. You won't do the MOST damage however it has really good damage and survivability. And depending on how deep into the backstory you go your spirit quests can play into the "defeating powerful foes and proving yourself".
Barbarian can easily fit the trope of a warrior seeking out more impressive and legendary adversaries, but if that's all you know about the character right now, you can easily apply that to any class. Obviously, fighter, paladin, barbarian, and even ranger come to mind immediately when I think of a character like this. However, I've played a hexblade warlock who's patron demanded he seek out more powerful does so that the weapon (his patron) could gain fame and infamy.
Bottom line is don't feel like a character motivation needs to be tied to a class. If you want to play a barbarian, play one, and it can have that motivation! But, any class could be applied to any character with the same mindset.
Sorry if that doesn't really help, I just don't want you to feel restricted to a handful of classes because of one character personality traits you really want to employ.

Zealot could also work very well. For race, dragonborn and Goliaths both have lore about wanting to be better every time and to be the best.
