The Barbarian actually is strong enough to shrug off a lot of damage. And this is amplified by certain subclasses. Barbarians can also wear medium armor and still have all of their powers such as Rage function so they do not have a big need to focus on 3 Attributes as a requirement. Dexterity is a nice boost but not required and there are other ways to cover much of it's functions through either abilities of the barbarian, medium armor, and feats can add to it as well if you choose. But they still primarily soak a ton of damage pretty well even with just medium AC of the 14 to 17 range.
Draconic Sorcecer doesn't require 3 stats to function either. Nothing in 5e gives them any big requirement over Charisma. Though Constitution is always nice. They also have a built in Mage Armor effect that increases their AC quite nicely with any extra points in Dexterity to increase it just being nice. But overall they are still relatively ranged casters like any other Sorcerer.
The one class that really requires 3 attributes is the Monk because They don't have an armor alternative to relax attribute requirements and they are Melee so they are going to take some amount of damage from being close to enemies. Which makes Wis and Dex must haves for their class abilities and Con that they can get as an important survival factor.

Should the barbarian UD be changed to 10+strength and constitution?
As far as I know there are only 2 classes* that have in them the requirement for 3 stats. (Barbarian and draconic sorcerer)
So should the barbarian use strength instead of dexterity for it's AC?
Shouldn't it be "strong" enough to just shrug off the damage instead of dodging out of the way?
