How do I add a new type of Dragon Ancestor ( 'Amethyst Dragon') to the Draconic Bloodline Sorcerer Class?
Whenever I try to add a new one via a Class Feature Option it shows up in the list in the homebrew editor after I have made it but does not show up in the drop down list along with 'Black Dragon', 'Blue Dragon' etc when I am editing the Character Sheet. Even though the new homebrew Draconic Bloodline is selectable.
It also strangely puts on the 'front page' of the homebrew: ---------------------------------------------------------------------------------------------- You can speak, read, and write Draconic. Additionally, whenever you make a Charisma check when interacting with dragons, your proficiency bonus is doubled if it applies to the check.

As magic flows through your body, it causes physical traits of your dragon ancestors to emerge. At 1st level, your hit point maximum increases by 1 and increases by 1 again whenever you gain a level in this class.
Additionally, parts of your skin are covered by a thin sheen of dragon-like scales. When you aren’t wearing armor, your AC equals 13 + your Dexterity modifier. -------------------------------------------------------------------------------
If I edit and existing Dragon, say the 'Black Dragon' and change it to 'Amethyst Dragon', the change flows through. I just can't seem to add a extra item to the list beyond the existing 10 Dragon types.
Heh, looks like your problem worked itself out while I was typing that response. Excellent news! What you saw was probably a result of caching; when you make edits to homebrew, changes can take 15-20 minutes to actually appear on a character sheet.

I do not know why but this is now working.... after closing browser tabs, browsers still not fixing it. I go and make a cup of coffee and it works.

Hey DungeonsAndFlagons9! Here's a walkthrough on how to add the Amethyst Dragon to the Draconic Bloodline Sorcerer.
Once you've created the new subclass using Draconic Bloodline as the template, you'll first want to edit the Dragon Ancestor feature:
Under Class Feature Options, click Add an Option:
... and fill out the appropriate information, remembering to also set the Required Class Level to 1:
You should now be all set!
