I just created a Hexblade Warlock with a constitution of 16 (+3) and chose the "Manual" option for HP. So at first level Warlock, I should have 8+3=11 hit points. However looking at it, it says I have 3. I tried to change it with the "Override HP" option, but upon using the "Short Rest" function, it reset my HP back to 3. I'm planning on using this character as a hard hitter with the Pact of the Blade, so the fact that it's forcing me to have 3 HP at first level sucks.
Nevermind, I got it. I didn't know you could go all the way back and edit it as if it were being built. I found where to manage it and edited it. It's super unclear that you have to edit it yourself for a level 1 character
I had a look and it all seems correct. As you say, you have HP set to manual, with 8 HP at first level, plus your con modifier of +3 for a total of 11.
I tested taking a short rest and the HP value stayed at 11, so everything seems fine.
If it happens again, can you click on the HP box at the top-right of the character sheet and then take a screenshot and link it here?
Yeah, like I said I figured it out. For some reason when you set it to manual, it assumes that you roll for first level as well and it's well hidden in the corner. So when you leave it, it takes it as a zero and just adds your constitution modifier
