+5 means when you roll the d20 for the attack, add 5 to the result. That's the attack roll.
The 20/80 is the range,if the target is 20 ft or less, normal attack roll, if more than 20 but 80 or less it's disadvantage, it cannot attack more than 80 ft away.

2 is the average damage if you just use that for faster combat , while 1d3-1 is the roll. You roll a d3 (or d6 which you then halve and round up) and then subtract 1 from the roll.

My monster has this for his attack
Dart. Ranged Weapon Attack: +5 to hit, range 20/80 ft., one target. Hit: 2 (1d3-1) piercing damage.
