I purchased 3 books through DND Beyond, and the content is there for building characters. I can also perform searches and a page from a book will appear in the search results.
But can I just "open" my books and turn them page by page? I would assume so, but I can't figure out how. Thanks for any help!
In the megamenu, hover over the word 'Sources.' From the dropdown, click on the title you purchased and want to read. That'll take you to a table of contents. Click on whatever chapter you want to read. There should be an in-chapter contents bar to one side, which also has links to take you to the next and previous chapters, as well as skipping around within the chapter, or back to the TOC (the book icon).
My problem is it seems I can do this with absolutely any book. Not just the ones I've bought, so whats the point in me buying Candlekeep Mysteries if I couldve accessed it without paying?

The Table of Contents is freely available to everyone - is that what you're seeing?
If you're able to click through and read the pages of sourcebooks that you haven't purchased, then that's because you have a character in a campaign with someone who has purchased them and enabled content sharing - allowing them to share their books with you.
So now that I've bought Candlekeep, can I only peruse it on this website? Or is there a way to view it sort of like a book instead of scrolling down pages?
I have just bought One grung above, and it does not show up when I look at the sources tab or click on the sources.

I use the DnDb app on my tablet(iPad) and that is a very e-book like experience IMO.

Dragonlance is under Featured Adventures in the Sources menu.
