I can re-add them the to campaign, no problem, but they seem to have deleted their online data.
We have their character stats in another format from a level ago, so the character can be re-created, but it would be nice to be able to pull them out of the "recycle bin".

I'm not sure whether that's possible or not. If it is, the account support team would know, but I strongly suspect that deleted means deleted.
I suggest that your player heads over to the D&D Beyond support site. The support team there will be able to assist them with this matter.
