I just started playing and i've bought two books the new 2024 player's handbook and the Explorer's Guide to Wildemount.
i got to level 5 but for some reason i dont see Echo knight as my sub choice ive got everything enabled i see all the other subclasses i bought but not the Echo knight one.
You need to use the 2014 Fighter (Legacy), not the 2024 Fighter (Core Rules). 3rd party stuff, such as Critical Role (EGtW is Critical Role content), is not supported for 2024 classes yet.
Ensure the Critical Role toggle is enabled.
Subclass is chosen at 3rd level, not 5th.

I can't access it with new characters but I can with ones I made months ago ... why?
All options checked including Crit Role.
As above - make sure you're using the 2014 fighter which is now considered Legacy content. When you choose a class scroll down a little and you'll see all the legacy classes.
I feel like I may need a little more clarity, I also have the issue where I can't make an echo Kinght, and I've toggled off and on almost every combination of these sliders lol, I currently have all of them in red and I still cant see the echo knight subclass

You are likely using the 2024 version of the Fighter class. Change your class to the 2014 "Legacy" version; you may need to scroll down in the class list to find it.
When will they be updating the Critical Role (Wildemont) materials for 2024? I am playing Adventurer's League, and I need to use 2024 since that is what is legal now. Wildemont is also supposed to be legal, but I can't create a 2024 echo knight? I just purchased the book specifically so I could have access to that.

Nobody here knows, because it's partly a negotiation of some kind between WotC and the other publishers
And I believe some people have homebrewed some of them without too much difficulty -- it's mostly copying from one window to the other, as I understand it.

This is exactly what it is. There's a couple of abilities that don't work well, because they have specific dropdown options that we don't have access to (such as a Carrion Raven ability to grant specific skills) but that can be worked around.
I've made sure I've selected the 2014 fighter class and all options are toggled on. I can't select the Echo Knight subclass either. It also looks like the Critical Role sourcebook that had the echo knight in it are gone from dndb as well. Fun.

The book's still here, and blood hunter is available in the builder. It's extremely likely that, even if the license expires and they stop selling it, people who bought it will continue to have access. (This is the case with the Rick and Morty book.)
Do you own it, or is it shared with you? If it's shared with you, are you making the character in the campaign in which it's shared? Is the appropriate toggle on in the builder?

Alternately, copy the Echo Knight as a homebrew subclass then reenter the options into 2024 Fighter as a fresh subclass.

I finally found the book. And while I would have sworn I'd purchased it, it looks like it was just something shared with me.
So, that explains the weird access
