The Extras tab doesn't have any support for dynamic stat blocks (where the creature's stats depend on the stats of its owner/summoner/etc.) so that's not possible. This has come up a number of times in various different contexts, but D&D Beyond hasn't given us any official word on when or if it'll be fixed.
You can make a homebrew creature that reflects your character's current stats and update it as you level up.

What is the best way to add the hound as an extra in the character sheet? I cannot even find the hound in the list.
