Oaths of Devotion, Vengeance & Ancients are the three paladin subclasses that are included in the Player's Handbook - there are additional paladin subclasses available in other sourcebooks:
Oath of Conquest, Oath of Redemption - Xanathar's Guide to Everything
Oath of Heroism - Unearthed Arcana (free - you just need to enable playtest content on your character)
Oath of the Crown - Sword Coast Adventurer's Guide
Oathbreaker - Dungeon Master's Guide
If you want to play a specific subclass, but aren't interested in the rest of the sourcebook, you can purchase just the subclass from the marketplace page for that sourcebook. If you later decide to purchase the whole of that sourcebook, it will be discounted by the amount you've spent already on content from it.
The only oaths I can see in the oath selector at lvl 3 are Devotion, Vengeance and the Ancients, but shouldn't I be able to see all of them?
