I've tried to run some search o trons and am getting mixed results so I'm trying to make sure if this is a, misunderstanding on my end of the rules or if D&D Beyond just doesn't quite have the capacity for what I'm trying to do:
The short is: Shortcutting to 4th level paladin spells cause I want find greater steed ASAP, because I want Find Greater Steed and Hold The Line from Cavalier.
The strat: 2 Levels of Paladin for Paladin spell prep. (You can prepare up to *blah* spells that you have a spell slot for.) 7 Warlock (rounded up to 8 for the ABI) for Fourth Level slots. As I have a fourth level slot, I should be able to prepare the fourth level spell Find Greater Steed, and would be required to cast it using my Warlock slot, correct? As I understand multiclassing rules, the limitation is on your ability to acquire the spell (Sorcerers learn on level up, Wizards add to book on level up, etc.) but Pal just, prepares for the slots they have access to.
(Side note: I'm aware this isn't the fastest way to a fourth slot as 2 Paladin, would be with say 6 Sorc would be both Cha based and all, Warlock just fits character flavor better for what I'm trying and was still in level range. It also still didn't let me prepare 4th level slots on the paladin side anywho.)
Spells Known and Prepared. You determine what spells you know and can prepare for each class individually, as if you were a single-classed member of that class.
So for your character that's a Paladin(2) Warlock(7) - you can only prepare Paladin spells as if you were a level 2 Paladin only - and level 2 Paladin's do not have 4th level spell slots.
The quickest way to get access to 4th level Paladin only spells (that I know of) is to get them through 10 levels of Bard from their Magical Secrets feature.

You're misunderstanding the multiclass spellcasting rules. This is the most important line from them:
