As you can see Option A, would allow you to freely change replicated item of the replicate infusion, without requiring a level to do so. While Option B, is more restrictive, preventing that.
"Using this infusion, you replicate a particular magic item." - This is the opening line to the replicate infusion. This sentence alone makes it seems the infusion itself is simply the replicate ability.
"You can learn this infusion multiple times; each time you do so, choose a magic item that you can make with it, picking from the Replicable Items tables." - Second line, again the replicate ability can be learned several times and after learning it, you choose a magic item that you make with it. Again, making it seem like the infusion is the ability and you have free will to change items at will.
