You might need to reskin the cannon element into a staff, like his staff he uses for all his force based attacks, but you can totally see the blasting rod potential, and the infusions can cover the enchantments he creates.
I've got a one shot next week set at level 11, and i'm gonna try to make myself a Harry Dresden wannabe and see how it goes.
My Harry Dresden was always Fire based Sorcerer where the material components of the spells were handled by his items, although some like when casting hold person were still consumed. Then a dip into Warlock for Fey Parton is a must, and I capped it off with UA Lore Wizard usually for post Changes maturity with subtle magics.
Proficiency with Guns if in your world can always be negotiated with your DM over a downtime activity although I always think he just has a gun not actually proficient with it. And Wands are not exclusive to Artificer, especially Dresden is likely not an Artillerist with a separate Turret, which is the only one that gets a special Wand, and playing a Dresden that attacks mostly with Guns seems a little off character. Archivist was potentially the best due to Bob but Dresden is not very psychic.
But ofcourse still sounds fun as Dresden has one great personality as a base for DnD character.
Ok, so, i was playing around with the idea and reading the artillerist cannon, and nothing i read there says that it has to look like an actual cannon.
So, i'm thinking handheld tiny version is him summoning a staff or his magic rings of force. The wand becomes his blasting wand, i was ignoring guns due to the DM not wishing to add blackpowder after some discussion.
Also, as for the small deployable unit, you can make it a Bob the Skull thing that either shields or shoots fire etc.
And you can add a tiny bracelet as a defense tool as well. As for infusions, well he can infuse his cloak/duster with armour bonuses, infuse some glasses to cover replacement magical items for things like that special unguent he uses to see through glamours etc.
Obviously it's not the same as 21st century Harry, but it's not a bad effort imo. Plenty of access to fire spells, force damage etc. High intel, make sure you take the investigation skill and likely pick up an investigator background.
Humm actually some very good ideas as long as your DM does allow Arcane Cannon to look like Staff. In the same vein you can see if your DM would allow a standard +2 shield be retractable into you Shield Bracelet, given the caveat that everyone can recognise the shield bracelet as they would a shield strapped to your back.
So, i played this yesterday, and it was incredibly fun.
Built at level 11, my eldritch cannon took the form of a cat for the most part, named Benny instead of Mister (neighbours cat), and i had a bob the skull through means of the rules of the one shot.
I essentially "won" the one shot game for the group, it was a very fun little session and playing as Harry Dresden was hilariously fun, i was giving sass to giant demons that could beat the hell out of me, but i couldn't play Harry without doing that, and at least two others in the group had read the books and acknowledged that as well played to suit. I mostly used fire and arcane cannon.
I was using 3 of my infusions, i gave one to an ally halfway through the game cause it was of better use for him, but ironically after i did that i got hit more (it was the repulsor shield). The big bad demon wanted us to get him this holy artifact that he couldn't touch, but we could and willingly hand it over, but due to my high investigation and arcana skilll knowledge (i was playing a proper wizard investigator after all) i figured out that this was very very bad and instead destroyed the object. I used the radiant weapon infusion on a dagger and threw it at the object (i'm pretty sure it doesn't actually do radiant damage, but the DM agreed to let it just for fun) and cause i'd earned an inspiration point earlier i also successfully hit it and destroyed it. Which killed a fellow party member, but they'd been corrupted by the devil so, meh.
All in all, that class was super fun to play and i look forward to playing it again, though not as Harry Dresden next time, just in my own flavour this time.

Artillerist + War Magic Wizard sounds very Dresden-ish indeed.
