Is there anything that prevents me from using claws twice as an attack action and performing the monk unarmed attack with my legs as a bonus action?
The Claws are considert simple weapons, which should be also count as monk weapons. I can't use them for the unarmed attack but I could use any other bodypart, can't I?

Your claws are simple weapons, hence Monk weapons. You are taking the Attack action on your turn using a Monk weapon, so the Monk's Martial Arts feature allows you to use a Bonus Action to make an Unarmed Strike, so long as you are not equipping a shield nor are you wearing armour. Unarmed Strikes do not need to be delivered with your hands, so you are good to go. You could even use your transformed hands to deliver the unarmed strike, but it would use your martial arts die, not the claw's d6, for damage.
You didn't ask, but you could use your STR modifier instead of your DEX modifier for your unarmed strikes if you chose, and since unarmed strikes count as melee weapon attacks, you would also get the extra damage from raging.
Edited to add: Your unarmed strikes will do bludgeoning damage, even if you use your claws. Flavour it as a back handed blow.

I consider a Fighter multiclass in this build which would give me unarmed fighting style. Wouldn’t that let me change the D4 Martial arts dice to a 1D8 or would there be a conflict?
There is no conflict. If you learn the Unarmed Fighting style, your unarmed strikes will do a d8 (if both hands are free) or a d6 if only one is free.
A few things to consider. Another multiclass will slow your progression in your main class. You can gain a fighting style without multiclassing by taking the Fighting Initiate feat.
You could also gain some benefit out of another level of Monk. Second level Monk gives you two Ki that recharge on a short rest, and three ways to use them (Flurry of Blows, Step of the Wind and Patient Defense). Second level Monk also gives you another 10' of movement and, if you are using the optional rules, Dedicated Weapon. Dedicated Weapon would allow you to combine your Martial Arts unarmed strike with a melee weapon attack with something like a Longsword. The restriction on Dedicated Weapons that they cannot have the Heavy or Special properties rules out things like Glaives or Two Handed Swords, but you can use Versatile weapons with two hands, like the Longsword, to get a d10 damage die. Depending on your build, that could be attractive.
Edited to add: If you are looking for a completely weaponless build, then getting Unarmed Fighting would be the way to go. If you are looking to use a weapon at least part of the time, when you aren't raging for example. a spear or quarterstaff (simple weapon, d8 with two hands) works with only one level of Monk, while a Versatile weapon like Longsword or Battleaxe (martial weapon, d10 with two hands) requires two levels of Monk for Dedicated Weapon.
You could also pick up Unarmed fighting as a feat I believe.
