My group is playing ToA, I made a warlock but it got insta killed by a random encounter. Yay. So now it’s back to the drawing board. I figured with more health I’ll die less, so barbarian it was. I’m trying to go with a samurai theme. Recommendations for multiclassing, ability scores, races, feats, backgrounds and sub classes would be appriciated
Barbarians are great, and yes. ToA is a rough campaign. One thing to consider is ToA is designed for level 1-9. So, if you're going to design a build that's really the maximum level.
Barbarian is a great 1st level. It gives you a 1d12 hit points, 2 skills, martial weapons, shields, and medium armor, Proficiency in Constitution Saves. If you plan to go with medium armor instead of Unarmored Defense then your max Dex is 14.
As for Paths. I recommend against Path of the Zealot in ToA. While the 1d6+half level radiant damage IS nice, Warrior of the Gods don't work in the campaign setting.
Side Note. There are enough skeletons in Tomb of Annihilation I recommend bludgeoning weapons if possible. Skeletons are vulnerable to it.
I am myself playing a Goliath Barbarian in ToA, right now 3rd level. I chose Totem Path (Bear) for
the extra damage resistance (everything except psychic). DM is having a tough time killing me, or even really endagering me at the moment.
I felt like taking Path of the Zealot would be too optimized given some elements of the campaign (I don't want to spoil that here)
Since you are asking for help optimizing, I would suggest Totem (Bear) for damage resistance, or Zealot (Radiant) for the extra plot specific damage boost, and perhaps easier to fit the Samurai feel you want. With Zealot, and going for the Samurai feel, you could flavour your Rage mechanic as "going into a very focussed state" or "zen like state", OR "being filled with holy purpose".
I have not looked at Multi-classing for ToA, so that is as far as my voice goes I think :)
Yeah, I get that losing "Warrior of the Gods" is a big loss. And the big boost of 14th level will most probably not come into play in ToA. It is mostly the campaign specific Radiant Damage boost. I am not regretting going Path of the Totem (Bear) at all

thanks for the suggestions, im a little bit nervous to take the zealot subclass because of the death curse negating an ability

May I ask why you're not making a Samurai if you're going for a Samurai theme? Not dying is a specialty of that class too.
Im not allowed to go fighter
... not allowed?
My group says I play it too much because out of the 6 or so characters I’ve played 2 of them have been fighters
