I want to create a firbolg barbarian but dont know what stats to pick, is AC inportant or is it better with a higher wisdom? I just need some help building one. What path should i choose?

Your most important stats as a Barbarian are going to be Strength and Constitution.
Beyond that, Dexterity will be useful for saving throws and AC, and Wisdom will be useful for saving throws (more common than Intelligence or Charisma). However-- You aren't required to build something that's optimized. If you want a charming Barbarian, prioritize Charisma. Think about the character you want to make, and use that to help you make your decisions beyond the core stats of your class.
If your the only one who is in front taking the hits - AC is really crucial, regardless of your class. An alternative build for this scenario would be prioritising con and dex. Its not the glory role but its needed sometimes. Nearly every cr1/8th creature has +3 to hit. If your ac is 13 then one in two shots will hit. It doesnt matter how much damage you can deal out or how many hitpoints you have if every round you bleed - sure it looks impressive but all your doing is draining every heal spell to patch your large hit point tank if your unlucky. Goblins have higher than that th! so 14 ac means goblins - often with bows will hit a 14 ac once every two rounds per goblin - thats bad, by the time you get to a 'miniboss' you will be a pin cushion and the possible healers will be glaring your way
Firbolg is solid, but not as optimal for certain builds as other options so if you like firbolgs, big tick in the yes box. If not - Bugbear, the sneaky strong, long armed murder hobo-barbarians can attack from behind a tank with a longsword, raging from a point the enemy cant hit them - thats the time to skimp on ac and reckless attack. You could also look at genasi if your going to be a storm herald barbarian. - its a thematic yes there. Last race choice is Yuanti - simply because they cover a whole host of weaknesses any character can love. Combine this with a zealot barbarian and a cleric of 5th with revivify in your party and suicide your way to victory - cheaply.
I do agree with moondruid that 13 AC sucks for a barb but I would just go shield barbarian. A great weapon barbarian is archetypal but I think with a Firlbolg you're going for something else. As a great defender of the wilderness a shield crafted from a fallen ancient revered oak is badass roleplay. Also, getting whittled down by attacks (remember resistance granted from rage) is more flavorful and probably tactically better than getting one-shotted by a Wis save spell effect that can take you out of combat for a round or more. Wis checks are scary for a typical barbarian so a +2 at lvl one ensures a pretty good baseline and the ASIs can be assigned to the main stats as the character progresses.
I completely agree goliaths are huge can count as one size larger when lifting, pushing, dragging, or carrying stuff. You can add your constitution modifier to a d12 roll to reduce that much damage. You're acclimated to altitudes of over 20,000 feet which can mean acclimated to over the height of Mount Everest and you have resistance to cold damage. Your strength score increases by 2 and your Constitution score increases by 1, they have lifespans comparable to humans although can live slightly longer not very often seeing as most die trying to best their previous great feat or deed. They are also 7 to 8 feet tall and weigh from 280 to 340 lbs. and proficient in the athletics skill and have a movement speed of 30 feet and can speak, read and write common and giant. So, as you were saying "If we're talking min/maxing, I think goliath still takes the barbarian gold star".

I like it. If you are using point buy or standard array you can dump Wisdom but still have a decent score.
In my noob opinion i would rank barbarian abilities in order of importance: Str/Con/Dex/Wis/Char/Int
So using standard array and applying racial bonuses
Str: 16 (+3)
Con: 14 (+2)
Dex: 13 (+1)
Wis: 14 (+2)
Char: 10 (+0)
Int: 8 (-1)

If we're talking min/maxing, I think goliath still takes the barbarian gold star. Firbolgs are a solid second choice, though.
