First, when does your ally decide to use the moat? Before the roll, after the roll but before result, or after the result?
Second, can the Performance of Creation create a functional poison/holy water /alchemist fire/etc. ? If I can create 100 gp worth of something that costs 50 gp, is that 2 seperate doses? When I hit 14th level and am not limited by gp, can I create 1000 vials of poison, or must it be a single giant vat of poison?
Third if you animate an item into a Dancing item, does it take an action to make people faster/slower? Does that affect one person or everyone who begins it's turn near it?
First, when they normally choose to use the bardic inspiration (after seeing the roll but before knowing the outcome). Second: It's states clearly that you can create one item, so 1000 vials of poison is an invalid choice. A barrel of poison is surely one item, but not listed in the equipment section, so to your DMs discretion. Also, it is unclear, whether you could produce a lake of acid or holy water underneath the feet of an enemy, with no roll to hit required; or whether you can create mounts, since they are listed in the Equipment chapter. All to your DMs discretion. Hopefully they apply the "rule of cool" and reward your creativity!
Even if your DM limits you to vials with a 1 level dip in hexblade and the poisoner feat(so you can apply poison as a bonus action) a 2nd level spell in exchange for 4-5 vials of purple worm poison is a decent deal. I say 4-5 as you may want to save the huge item for fun huge items like a trebuchet and leave the multiple small/tiny items for your vials of poison. If he lets you have a small vat of poison hey have at it, or heck a huge vat of it.
Though I'd hand the vials to the rogue most likely, with their sneak attack at level 15 that's 20d6+weapon damage, and you probably have better things to do than stab people.
