If you get the third attack, would that attack also have the proficiency bonus as well?
If you read the rules about crossbows, then it says that because of loading, you can only make one attack with each weapon. And two weapon fighting means you add your proficiency bonus to the bonus action attack. So you make two attacks, one action one bonus action, not three.

I believe you have misinterpreted the rule.
2 weapon fighting style applies to melee weapons only, and the weapons need to have the light property for you to be able to do this. IE, 2 shortswords allow you to use 2 weapon fighting. 2 longswords does not unless you have the feat "dual wielder". Archery fighting style applies to all ranged weapons.
Hand crossbows, though they are 1-handed weapons are not melee weapons and they do not have the light property. Additionally they have the loading property, meaning that you can only take 1 shot per turn.
If you have the crossbow expert feat that removes the loading property and allows you to fire twice or more with the same hand crossbow if you have multi attack and once as a bonus action. Note: you still have to have a free hand to reload the thing. Crossbow expert doesn't turn your crossbow into a semi-automatic weapon. Remember that loading a ranged weapon whether it's a bow, sling, or crossbow is a part of taking the attack action.
A crossbow expert dual-wielding hand crossbows should only get 2 shots and would need to holster or drop one of them to reload. A crossbow expert using one hand crossbow gets the exact same number of shots.

Why did you necro a thread from over 20 months ago? You are also wrong, two weapon fighting by default requires 2 light melee weapons, the Dual Wielder feat has nothing to do with the basic rules of two weapon fighting which requires light melee weapons.
When you take the Attack action and attack with a lightmelee weapon that you're holding in one hand, you can use a bonus action to attack with a different lightmelee weapon that you're holding in the other hand. You don't add your ability modifier to the damage of the bonus attack, unless that modifier is negative.
If either weapon has the thrown property, you can throw the weapon, instead of making a meleeattack with it.
Adding the Fighting Style of Two-Weapon Fighting allows,
Two-Weapon Fighting
When you engage in two-weapon fighting, you can add your ability modifier to the damage of the second attack.

To do this you need to be only holding ONE hand crossbow. If you are holding TWO hand crossbows you can only attack 2 times regardless of level (and after you fire them you can never fire them again until you drop one or put it away)
The reason is the ammunition feature. Having crossbow expert allows you to ignore the loading feature, but it does not allow you to ignore the ammunition feature and the ammunition feature requires a free hand to reload.
Using the crossbow expert feat is basically like the old westerns where the guy is holding a colt in one hand and using the other hand to fan the hammer. Same with XBE - you are holding the crossbow in one hand and rapidly reloading and firing.
It is not possible to fire a hand crossbow using TWF because TWF requires "light melee weapon" in both hands.
