I tend to gavitate to Mystra and Selune. When I played martials I was fond of Shaundakul. Tymora's a solid pick if I don't have anything particular in mind.

Any time an unfathomably powerful entity sweeps in and offers godlike rewards in return for just a few teensy favors, it’s a scam. Unless it’s me. I’d never lie to you, reader dearest.
Mystra overall as I utilize them for many of the fantastical things my players come across (that I design).
Tempus for any warrior, barbarian, etc.

"...or you can find the secret tunnel that leads to the Vault of Dickish DM which is filled with 10,000,000 copper coins and a 5,000 pound solid gold statue of a middle finger that is too big to fit through the door."
I've only really played one character that cared about gods, that was Peregrine my Aarakocra Monk/Cleric; he was a follower of the Angharradh which is an exceptionally good value goddess because she's really four in one! Gave me lots of aspects to play with in my spell choice and his behaviour; suddenly u-turning from fighty champion of justice to wannabe matchmaker.
Beyond that most of my characters function as the D&D equivalent of atheists; i.e- they only believe in those gods whose influence they've witnessed, and even then disprove of the idea of them existing at all. Though some like Bullette (the minotauress gunslinger/rage monster) probably wouldn't mind the patronage of a war god, but only if she doesn't have to change in any way since she very much embraces her chaotic good alignment.
One of my other characters, the self-obsessed, technically evil (but not disruptively so) Dracarys Noir encountered someone claiming to be Pelor, but describing himself as if he actually meant Llathander, and being a knowledgeable sort Dracarys corrected him mercilessly. He probably goes beyond the pseudo-atheist camp though; he was cursed and when he turned to the gods for help they shunned him, so he now hates them all and if he ever gets the chance to become a deity himself will probably seek his revenge.
So I guess you could say my favourite god(s) are whichever ones fit my characters at the time.
My favourite story though has to be Eilistraee, the only (chaotic) good member of the dark seldarine, daughter and enemy of Lolth, and patron of drow who long to return to the surface and live in peace free from Lolth's control. I also like some of the more morally ambiguous deities like the Raven Queen. The richer the backstory the better as well; I don't really like the one-note deities that are just an embodiment of their domain and basically that's it, which is why the elven pantheons can be especially good, as even the good ones are usually total arseholes who've done terrible things, like Corellon Larethian's treatment of the drow, though I dunno if I'd play a character connected to him specifically.
Former D&D Beyond Customer of six years: With the axing of piecemeal purchasing, lack of meaningful development, and toxic moderation the site isn't worth paying for anymore. In my homebrew world, no gods have come close to the number of appearances Bahamut and Mask have made. The only difference is, in my world, Mask is female. These two gods are the most hands on of all the gods.
I've had a few over the years, Been big on both Sune and Selune but the one god that has been fun to RP with?
Bane.
Playing a priest of bane as a PC is a hell of a thing because I got to extol to people the virtue of the strong dominating the weak and how everything would be so much better if people accepted that the most ideal world is one where freedom is completely abolished. Not out of cruelty or some Bioware "evil is cool guys" aesthetic but because the character legitimately believes that all of the strife in the world is because people refuse to shut up and do what they're told without hesitation.

What are some peoples favorite gods that work for multiple Domains? I have a soft spot for Illmater for Grave/Life/Light domains.

Some of my favorite Gods to be clerics of would have to be Selune, The Raven Queen, Tiamat, Uk'otoa, and Sekolah.
