Would Gaia be a patron for clerics/warlocks or would she be a nature deity that druids go to for wisdom? asking because I'm thinking of what to multiclass my Fey Wanderer Ranger into.
You mean the Earthmother? Or are you talking about Gaia from some other setting than the Forgotten Realms?
The Earthmother of the Forgotten Realms is a primal spirit of Toril so druids would fit better but warlock or sorcerer could work as well if we had some nature themed subclass for those.
I think a goddes like that should work as either of those three. No need to restrict yourself by deciding that you can't do something because the force of natur/god/deity/mighty elemental thingy you're making up yourself can't have more than one of those or just one specific one.
In Forgotten Realms the Earthmother is one of the many names given to Chauntea, a deity who had druids as well as clerics, paladins and rangers.
As for the titan from Greek mythology, I think she would be most fitting for druids, though she might have clerics as well. If you want a distinction between titans and the Olympian gods, you could let the titans have druids and the more civilized gods have clerics.
In either case, I think she is above the powerlevel of typical warlock patrons. In Greek mythology, nymphs would be appropriate patrons for Archfey warlocks IMO.

I don't think the powerlevel is the significant difference betweend Clerics and Warlocks. Asmodeus has Warlocks in almost any settings he's in and he's at least akin to a god in most settings. I think the main difference is the type of connection you have with the otherworldly beeing.
