I would be a Moon Druid level 18, fighter level 2. The strat would be find the biggest baddest dinosaur you can, then wild shape into it. Most dinosaurs have insane multi attack combos, so if you combine that with action surge, you are looking at TONS of damage, and you would also EXTREMELY tanky. Unfortunately from what I hear most DMs don’t play with dinosaurs tho
I think you have missed the "in real life" part of the thought experiment. So, you probably won't be finding dinosaurs (bones and fossils would not count) and there's no DM. Also, it doesn't seem like multiclassing is permitted in this.

Also dnd rules say: “Starting at 2nd level, you can use your action to magically assume the shape of a beast that you have seen before.”. It doesn’t say that you have had to see it in first person, so I could just watch Jurassic park and rock up next morning as a Dilo or a velociraptor. That’d be cooool
One can argue that seeming a computer generated image on a screen of what people thought a dinosaur might possibly look like (and is now thought to actually be wrong), is not sufficient to say you have seen the actual dinosaur. Same reason you can't just paint a detailed picture of something and consider it as "having seen that thing".
I'd say to qualify as having "seen" something, you need to have actually seen it: be it with your own eyes or the image directly captured on video. CGI would not qualify, no matter how accurate it might be (and, again, Jurassic Park was *not* accurate and even in the movie it was explained they were not even proper dinosaurs since they lacked the full genomes: they're mutated genetically-altered hybrids).
