So I'm printing minis and I have to prioritise which ones to print & paint in order to keep up. Which beasts are likely choices for a Moon Druid's Wildshape (preferably by level)? Eventually I'm likely to do all beasts, but as I said, I need to prioritise!

Of CR 1 beasts, Brown Bear is solid, if your DM requires the "seen" condition. If not, Giant Hyena is a tank, and the Dire Wolf right behind. And, as stated above, if your campaign includes dinosaurs, Clawfoot Deinonychus are great.
For the additional Druid levels, just search by the relevant CR beast. TBH, in terms of relative effectiveness with other classes, Moon Druids are best at lower levels, then other classes gradually catch up to the DPR they can do in wild shape. But the Moon Druid definitely gets a boost at level 10, when they get elemental forms.

Is most combat taking place strictly on land?
