As always, it depends on your DM. But since the natural weapons of most beasts are way more powerful than the (low level) Monk's unarmed strikes, it seems to be consensus that the BA attack deals only your martial arts damage. Also there is no restriction to creature types concerning Attacks of Opportunity, so yes. The damage should be the normal beast's damage. Deflect Attacks should also work, but it uses the beast's stats and level (CR), not the monk's. Sounds like a fun character, enjoy!
Using the 2024 Rules. I have 6 Levels in Moon Druid and 1 Level in Monk. I'm Wildshapped into a Saber-Toothed Tiger (CR 2).
