I'm kinda in a bad mood so I'll get straight to the point. Would a Tortle be good for the Druid class, and if so, what archetype and feats would best support a defensive, tanky Druid play-style? If not, what are some good races for the Druid that aren't from the PHB?
From a roleplay standpoint, a Tortle seems to be a fun race for the class. Why not have a giant turtle be a nature lover? If you would like to roleplay a Tortle, I would say go ahead and try it.
Mechanically speaking, a Tortle would be a decent class for Druids, as they get a +1 to Wisdom, along with some natural armor. Statistically speaking, there are "better" races , but Tortles are a good option. The most obvious choice for a tanky playstyle would be to go for Circle of the Moon. The ability to wildshape for essentially a new pool of hp make them powerful. Sentinel is always a good feat to take for those in the thick of things, and want to try and control the battlefield. Tough might be a good one to take as well, incase you get stuck in your Tortle form.

Entangle. What's not to love about you and your allies having advantage against multiple foes, whilst they are unable to move and have disadvantage against you and your allies?
If you are starting at low level and you don't have a high STR or DEX, you'll probably want shillelagh for when you're not in wildshape. Starting at L5 or above, primal savagery is going to be better. Thorn whip is a ranged control option (and is just damn cool). Thunderclap might also be worth considering.
As for intesting druid races the Loxodon race from Ravnica. It's a elephant person, that has an AC calculation of 12 + Con, and a trunk you can use to beat people with.
Primal Savagery is a cantrip where your claws and teeth become momentarily sharpened and acidic, allowing you to do a melee spell attack for 1d10 acid damage. As with most cantrips this increases at 5th, 11th and 17th level. You can buy it separately from the whole book if you want just it.
